or to taste

apple cider vinegar

Instructions
Heat oven to 425.
Dice unpeeled potatoes in cubes.
Place diced potatoes on a baking sheet.
Toss with oil, seasoning and vinegar.
Roast for 25 minutes, or until done.
Eat as a warm side dish, or cold on a salad or grain bowl.
Store covered in the fridge for up to a week.
