- 1 lb potatoes about 3, medium
- 2 tbsp olive oil or fat of choice
- 1 tbsp RealTaste Hope seasoning or to taste
- 1 tsp apple cider vinegar optional
- Heat oven to 425.
- Dice unpeeled potatoes in cubes.
- Place diced potatoes on a baking sheet.
- Toss with oil, seasoning and vinegar.
- Roast for 25 minutes, or until done.
- Eat as a warm side dish, or cold on a salad or grain bowl.
- Store covered in the fridge for up to a week.
