Lentil Taco Bowl
This is one of our favorite summer dishes. The mango salsa brings a bright contrast to the dish.

RealTaste Vida seasoning

cooked brown rice
salad greens
Mango Avocado Salsa

mangoes
about 2 cups, diced

avocado
about 1 cup, diced
1/4
cup
red onion
minced
1/4
cup
cilantro leaves
fresh

honey
or to taste

lime juice

salt
Instructions
In a small pot, bring lentils and water to a boil.
Reduce heat to low, cover and cook for about 30 minutes, or until soft.
Mix in Vida seasoning.
Serve over rice topped with salad greens and Mango Avocado Salsa.
Mango Avocado Salsa
In a medium bowl, mix together mangoes, avocado, onion, and cilantro.
Mix together honey, lime juice and salt.
Pour over mango mixture and toss to coat.
