Lentil Taco Bowl

This is one of our favorite summer dishes. The mango salsa brings a bright contrast to the dish.

Ingredients
  

  • 1 cup green/brown lentils
  • 2 1/2 cups water
  • 2 tbsp RealTaste Vida seasoning
  • 1 cup cooked brown rice
  • salad greens

Mango Avocado Salsa

  • 2 mangoes about 2 cups, diced
  • 1 avocado about 1 cup, diced
  • 1/4 cup red onion minced
  • 1/4 cup cilantro leaves fresh
  • 1 tsp honey or to taste
  • 2 tbsp lime juice
  • 1/4 tsp salt

Instructions
 

  • In a small pot, bring lentils and water to a boil.
  • Reduce heat to low, cover and cook for about 30 minutes, or until soft.
  • Mix in Vida seasoning.
  • Serve over rice topped with salad greens and Mango Avocado Salsa.

Mango Avocado Salsa

  • In a medium bowl, mix together mangoes, avocado, onion, and cilantro.
  • Mix together honey, lime juice and salt.
  • Pour over mango mixture and toss to coat.
