This is one of our favorite fall salads! Add chicken or turkey for a heartier salad. You can also substitute apples for the pears and toss in some dried cranberries for variety.
Place ingredients in a blender or food processor and blend until smooth.
Store covered in the fridge for up to a week.
Maple Glazed Nuts
Heat skillet to medium heat.
Add nuts, maple syrup, salt and Peace seasoning.
Stir constantly for 4 minutes.
Pour onto parchment paper to cool.
Salad Assembly
Toss spinach and romaine with half of the dressing.
Divide onto 6 plates, or spread greens on a platter.
Top greens with pear slices, red onion rings, maple glazed nuts and feta cheese.
Drizzle with remaining dressing and enjoy.
Notes
The dressing is best made a day or two in advance to give the flavors a chance to mingle. The nuts can be made in advance. If they aren't as crispy as you'd like; place in a 200 degree oven for 10-15 minutes. Tossing the greens in half of the salad dressing, before drizzling with remaining amount really makes a difference in the flavor.
