Lentil Taco Bowl
This is one of our favorite summer dishes. The mango salsa brings a bright contrast to the dish.

Ingredients
- 1 cup green/brown lentils
- 2 1/2 cups water
- 2 tbsp RealTaste Vida seasoning
- 1 cup cooked brown rice
- salad greens
Mango Avocado Salsa
- 2 mangoes about 2 cups, diced
- 1 avocado about 1 cup, diced
- 1/4 cup red onion minced
- 1/4 cup cilantro leaves fresh
- 1 tsp honey or to taste
- 2 tbsp lime juice
- 1/4 tsp salt
Instructions
- In a small pot, bring lentils and water to a boil.
- Reduce heat to low, cover and cook for about 30 minutes, or until soft.
- Mix in Vida seasoning.
- Serve over rice topped with salad greens and Mango Avocado Salsa.
Mango Avocado Salsa
- In a medium bowl, mix together mangoes, avocado, onion, and cilantro.
- Mix together honey, lime juice and salt.
- Pour over mango mixture and toss to coat.
